A: Bread Flour 300g
Instant Yeast 4g
Sugar 18g
Salt 6g
Warm Milk 200g
B: Unsalted Butter 18g

— A配料放入搅拌机 低速 3minutes 中速 10minutes
— 加入butter 面团搅打成8分筋状态 (面团表面无小疙瘩,表面变得比较光滑)
— 第一次发酵 1 hour (28℃ 湿度75%) 发酵至2-2.5倍大,戳洞不回缩即可
— 面团分切按压排气, 滚圆至表面光滑, 室温松驰 10minutes
— 面团排出大气泡, 按扁, 上下表面沾玉米粉
— 第二次发酵 20minutes (28℃ 湿度75%)
烤箱预热 350℉/ 180℃ 烤20minutes, 可用圆形模具控形,上压烤盘
