Recipe 500g x 1 Serving
A:Bread Flour 150g
All purpose Flour 30g
Salt 4g
Sugar 10g
Milk Powder 10g
Water 110ml
Instant Yeast 2g
B: Poolish 波兰种 1份
C: Unsalted Butter 15g

— A.B类所有配料放入搅拌机内, 低速3minutes, 中速 3minutes搅拌成团
— 加入butter 低速 2 minut, 中速 3minutes, 面温25℃ 面团完全扩展无锯齿状
— 面团第一次发酵 1 hour(28℃ 湿度75%) 发酵至2-2.5倍大,戳洞不回缩即可
— 面团排气 3折3次 揉圆, 28℃ 发酵30minutes
— 分割面团滚圆至表面光滑, 不可破皮. 松驰 15minutes
— 整形放入模具 (28℃ 湿度75%) 发酵约 1 hour 至模具7分满
— 烤制前面包顶部刷蛋液
烤箱预热 350℉/ 180℃ 烤20minutes, 模具平转180度烤 10minutes
